The cookbook I never got around to finishing…

Mexican Lasagna 11/19/2009

1 lb. ground beef

1/2 c. chopped onion

1/2 c. chopped green pepper

2 1/2 c. salsa

1 can corn

1 tsp. chili powder

1 tsp. ground cumin

1/4 c. sliced pitted ripe olives

10 flour tortillas

2 c. small curd cottage cheese

1 c. sharp cheddar cheese

Brown meat, add onion and green pepper until vegetables are clear. Add salsa, corn, olives, and seasonings. Layer 1/2 the meat sauce, 1/2 the tortillas, 1/2 cottage cheese in a 13×9” dish. Repeat layers in reverse. Top with cheddar cheese. Bake at 325F for 30 minutes.
