Beef Stroganoff 11/19/2009

3” x 3” thin cut London Broil rubbed with lemon pepper (the more marbled the better)

2 tbs. olive oil

2 tbs. butter

1 c. thinly sliced, coarsely chopped onion

1 1/2 c. sliced fresh mushrooms

1 c. beef stock

1 1/2 tbs. flour

1 tsp. salt

dash nutmeg

2 c. sour cream

1 large package egg noodles

parsley

salt

pepper

butter

Cook meat at 325F for 20-25 minutes. Cut on the diagonal onto 1/4” thick strips. In a dutch oven, heat oil and butter. Saute onions and mushrooms over low heat until soft but not brown. Add meat, cook for 10 minutes. Add beef stock, cook for 30 minutes. Mix remaining ingredients with beef mixture. Cook until thick but don’t allow to boil. Stir occasionally. In a separate pot, cook noodles until al dente. Drain, season with salt, pepper, and parsley. Place noodles in a buttered shallow 8×11” casserole dish. Pour beef mixture over noodles and fold gently. Top with parsley, cover with aluminum, and refrigerate. Reheat at 350F until it bubbles around the edges.

    Modifications to this:
    Add at least a teaspoon of caraway seeds and sautee them with the mushrooms and onions.
    I also substituted a dash of Allspice (I’ve never made it with the nutmeg but decided to re-introduce something like it).

    Was fantastic!
