The cookbook I never got around to finishing…

2 deep dish pie crusts

5-7 large Granny Smith apples

1 small container of whipping cream

2 tbs. melted butter

1 c. sugar

2 tbs. flour

1 egg

¼ tsp. salt

1 tsp. cinnamon

2 tbs. lemon juice

2 tbs. Kahlua

Peel, core and thinly slice enough Granny Smith apples to fill a deep dish pie crust. Save peelings and cores in a paper bag and take to nearest barn. Feed to horses. Layer the slices tightly, and mound the apple slices well above the rim of the pie pan. Combine whipping cream, melted butter, sugar, flour, egg, salt, cinnamon, lemon juice, and Kahlua in a blender. Mix well. Very slowly, pour mixture over apples, coating evenly. Top with second crust, sealing the edges of the two crusts. Cut vents into the top crust. Bake at 400°F for 45 minutes, but don’t let crust burn. Remove from oven, cool, and refrigerate. Serve the next day cold or reheated.
